 mn season winds down\, it is the perfect time to b
 egin foraging and digging roots. As the plants beg
 in to draw their energies into the ground to store
  them for winter\, we can begin to take advantage 
 of this and dig them up to be used as tasty root v
 egetables or process and dry them for coffee\, tea
 \, and medicine. </p>\n \n <p>We'll take an in-dep
 th look at some specific roots that we love to har
 vest this time of year and discuss ecology\, histo
 ry\, recipes\, and how to harvest and process. </p
 >\n \n <p>We'll walk through the process of making
  dandelion root coffee from start to finish and en
 joy a sample to end the class. Participants will g
 et hands-on experience digging and cleaning roots\
 , learning what to look for and what to avoid\, an
 d demystifying the process of turning roots into f
 ood and drink. </p>\n \n <p style="line-height:1.3
 8\;"><em>Beginners and experienced foragers are we
 lcome. </em></p>\n \n <hr />\n <h2>Program Notes:<
 /h2>\n \n <p><strong>Environment: </strong><br />\
 n This class will take place outdoors\, rain or sh
 ine\, along walking trails in meadow and woodland 
 ecosystems at the Horn Farm. Please check the weat
 her in advance and dress accordingly.</p>\n \n <p>
 <strong>Accessibility: </strong><br />\n This prog
 ram will involve walking on uneven\, hilly terrain
 . Be prepared for varied and potentially muddy or 
 snowy conditions. Walking pace is leisurely with f
 requent stops for discussion. </p>\n \n <p><strong
 >Arrival: </strong><br />\n Parking takes place in
  the field above the farmhouse. Plan to arrive 10 
 minutes early so we can begin the class on time.</
 p>\n \n <p><strong>Audience: </strong><br />\n Thi
 s class is geared towards adult learning\, but chi
 ldren 12 and older are welcome to attend with an a
 dult and separate registration. </p>\n \n <p><stro
 ng>Cost: </strong><br />\n The standard cost for t
 his program is $55/person. </p>\n \n <p><strong>Se
 rvice Animals & Pets: </strong><br />\n Service an
 imals\, active and in-training\, are permitted. Al
 l other animals and pets must remain at home. The 
 Horn Farm is a working farm with sensitive restora
 tion areas\, so we only allow animals in cases of 
 medical need. </p>\n \n <p><strong>Cancellation: <
 /strong><br />\n All programs are subject to chang
 e due to unforeseen circumstances including inclem

 <p>Jonathan Darby is a wild foods enthusiast and e
 ducator\, avid gardener\, former farmer\, and has 
 served the Horn Farm Center in varying capacities 
 for over 15 years. He currently serves as Farm Man
 ager. Jonathan received his Permaculture Design Ce
 rtification in 2011 from Susquehanna Permaculture 
 and in 2014 completed his Permaculture Teacher Tra
 ining through Dynamic Ecological Design. He is mar
 ried with 2 kids and 3 cats.</p>\n \n <hr />\n <p>
