We’ve added many elderberry shrubs to the Horn Farm landscape in the past few years as part of our ecological restoration of our riparian buffers. As a bonus, late summer greets us with the bright purple berries that are coveted by birds and people alike.
Syrup made from the elderberries is an immune-boosting preventative and remedy for the common colds and flu as well as a delicious flavoring added to drinks, ice cream, and more.
Join us for an in depth exploration of the American Elder - discussing ecology and history, identification and harvest, and the many ways we can incorporate this amazing plant into our lives. This class will take place both in the field as we learn to identify and harvest elderberries in the wild, as well as the summer kitchen, where we will walk through the process of making elderberry syrup from start to finish. All participants will leave with a small jar of finished syrup. Expect to leave with purple fingers, and a newfound appreciation for one of our favorite shrubs.
Bring a drawing pad and pencil for sketching and notes, and dress for the weather. We’ll be outside, rain or shine, and getting up close and personal.
Beginners and experienced foragers are welcome.
About the Instructor: Jonathan Darby
Jonathan is the owner/operator of the Wallicks Farm Project, Riverbend Foraging, and co-owner of Riverbend Comics. Jonathan is a farmer, wild foods enthusiast, and educator. He is a certified permaculture designer and teacher and serves on the Board of Directors for the Horn Farm Center for Agricultural Education.

This class will take place outdoors. Please check the weather in advance and dress accordingly. Be prepared for walking on uneven terrain and potentially muddy conditions.
