Foraging: From Field to Plate

Knowing how to forage safely, with correct identification and proper harvesting techniques, is only half of the journey. The real joy of foraging begins when we enter the kitchen and create delicious meals, snacks, and drinks with the bounty of the wild.

This class will be a hands-on experience allowing folks to roll up their sleeves, and do some harvesting of specific spring plants we’ve discussed - putting into practice observation and identification, harvesting, and cleaning. 

After a general plant walk on the property, we’ll spend the second half of the class in the summer kitchen where we’ll prep our bounty into various dishes that we’ll make from start to finish followed, of course, by tasting the results.

Participants will leave with some foraged greens to use at home, recipes/instructions on what was made in class, and a newfound sense of empowerment when spending time in the wild.  
There will be a short break in the middle of the class - brink snacks or drinks to tide you over until our tasting if needed. This class will be held in the field, rain or shine - dress for the weather.


About the Instructor:

Jonathan Darby is a wild foods enthusiast and educator, avid gardener, former farmer and has served the Horn Farm Center in varying capacities for over 15 years. He currently serves as Land Manager & Educator. Jonathan received his Permaculture Design Certification in 2011 from Susquehanna Permaculture and in 2014 completed his Permaculture Teacher Training through Dynamic Ecological Design. He is married with 2 kids and 3 cats.


Program Notes:
This class will take place outdoors. Please check the weather in advance and dress accordingly. Be prepared for walking on uneven terrain and potentially muddy conditions.

Parking takes place in the field above the farmhouse. Plan to arrive 10 minutes early so we can begin the class on time.
