SUMMARY:Intro to Lacto-Fermentation
DESCRIPTION:&nbsp\;\n \n Usually preservation happens BEFORE t
 he lean times of winter\, but this intro course wi
 ll prep you for the upcoming bountiful harvests of
  the spring and summer seasons as well as help get
  your palate through the rest of those bland winte
 r doldrums with the creation of a zesty and health
 ful side dish/condiment.\n \n This is an interacti
 ve workshop geared for the newbie fermenter and wi
 ll begin by priming your palette with SAMPLES of s
 ome recent fermentations made by the facilitators 
 whilst discussing the health benefits of lacto-fer
 mented foods.&nbsp\;\n \n You will learn both brin
 ing and salting methods of lacto-fermentation to b
 egin making your own pickles\, krauts\, hot sauces
 \, and kimchis. You will then have the opportunity
  to make a small-batch ferment of your choosing ba
 sed on the produce and spices provided. You will l
 eave not only with a ferment of your own creation\
 , but enough knowledge to continue to experiment w
 ith fermentation throughout the upcoming growing s
 eason using all kinds of fresh seasonal produce.&n
 bsp\;\n \n Feel free to bring any favorite kitchen
  implements\, knife\, mandoline\, box grater if yo
 u desire.&nbsp\;\n \n Class includes quart jar\, p
 ickling weight\, various vegetables and spices wit
 h which to create a ferment\, step by step instruc
 tion on both brining and dry-salting techniques as
  well as info on the health benefits of lacto-ferm
 entation. &nbsp\;&nbsp\;\n \n About the instructor
 s:\n \n Justina Wenger-Pfarr and Donna Volles are 
 two seasoned fermentationistas who love to talk fo
 od (with food in their mouth!)\, nutrition\, and w
 ays to create health-conscious comestibles. These
