
As the autumn season winds down, it is the perfect time to begin foraging and digging roots. As the plants begin to draw their energies into the ground to store them for winter, we can begin to take advantage of this and dig them up to be used as tasty root vegetables or process and dry them for coffee, tea, and medicine.
We'll take an in-depth look at some specific roots that we love to harvest this time of year and discuss ecology, history, recipes, and how to harvest and process.
We'll walk through the process of making dandelion root coffee from start to finish and enjoy a sample to end the class. Participants will get hands-on experience digging and cleaning roots, learning what to look for and what to avoid, and demystifying the process of turning roots into food and drink.
Beginners and experienced foragers are welcome.

This class will take place outdoors. Please check the weather in advance and dress accordingly. Be prepared for walking on uneven terrain and potentially muddy conditions.

About the Instructor: Jonathan Darby

Jonathan Darby is a wild foods enthusiast and educator, avid gardener, former farmer, and has served the Horn Farm Center in varying capacities for over 15 years. He currently serves as Land Manager & Educator. Jonathan received his Permaculture Design Certification in 2011 from Susquehanna Permaculture and in 2014 completed his Permaculture Teacher Training through Dynamic Ecological Design. He is married with 2 kids and 3 cats.
