Here’s what to expect in this week’s share:

Summer Squash Casserole

Summer squash season is long and I’m always looking for new recipes and ways to use it.  Summer squash noodles, grilled summer squash, roasted – all are great.  A few years ago I had a delicious summer squash casserole at a friend’s wedding. It was warm cheesy comfort food and just what I needed at the end of summer and with cooler weather coming in.  Here’s my rendition of that casserole

  • 2 cups thinly sliced summer squash
  • 1 ear of corn cut off the cob
  • 1 jalapeno (my favorite CSA hot pepper)
  • 1 medium onion chopped
  • 2 cloves of garlic
  • 2 T butter
  • 1 egg
  • 1/2 C sour cream
  • 1 C shredded cheese
  • Crushed crackers for topping
  1. Preheat oven to 400F
  2. Saute the vegetables in the butter until just softened
  3. Mix the sour cream and 3/4 C cheese into the veggie mix, add the egg once it has cooled a bit so it doesn’t scramble in the heat
  4. pour the mixture into a 9×9 in casserole dish
  5. Mix the remaining cheese with the crackers and top the casserole with the mixture
  6. Bake for 25 minutes

Here’s wishing you all a very happy Labor Day!  Cookouts and grills are wonderful ways to use the veggies in your CSA.  Here’s some ideas:

  • Marinated grilled vegetable kabobs
  • Watermelon mint salad
  • Grilled corn on the cob
  • Potato salad
  • Panzanella salad
