Horn Farm Happenings – September 13, 2019

One month from today, our next cohort of Woodland Stewards will begin their training on the farm!  This program is designed for anyone who wants to learn practical skills in woodland restoration and maintenance, to gain an understanding of ecological succession, and to develop the knowledge and skills to implement regenerative land management practices.

Wilson explainsDo you want to learn to transform degraded woodlands into healthy, biodiverse, productive habitats by using hands-on, ecologically sound techniques? This part-time program is designed to be useful to the professional and the layperson, to landowners and land stewards, activists, naturalists, and outdoor enthusiasts. No previous experience required. We have one space left in our Fall/Winter session which runs from October 14, 2019 to April 13, 2020. Find out more about the Woodland Steward Training Program.

We can expedite environmental restoration by increasing variability in forest structure and habitats. By understanding our role as stewards of the land, and by using techniques based on the behavior of animals that used to inhabit this area, we can expedite increases in biodiversity and the carrying capacity of our semi-wild lands. By restoring our relationship with the land, we can remember the true meaning of what it is to be human–that we are a part of nature, not outside of it. Horn Farm Happenings – September 6, 2019

Cooking with edible flowers adds another dimension to a dish. Their beautiful colors and delicate flavors can truly take a dish from good to magnificent! On October 5th, from 9:30 to noon, join us for Cooking with Flowers.

Betsy Dorbian operates Betsy’s Flowers at the Farm and will be sharing her knowledge about pairing food and flowers as the instructor of this workshop. We’ll take a walk through the rows of flowers on her farm (located at the Horn Farm) and pick flowers for cooking recipes such as Lavender Blueberry Soup, Flower Embellished Goat Cheese, Savory Flower Spread, and Candied Flower Blossoms. See and taste what lavender, calendula, anise hyssop, nasturtium, and flowering basil can do for your food!
Class size is limited to ten, so register early!


On October 7 from 6 to 8, we’re exploring the art of fermentation during Kombucha Making.

Homemade Fermented Raw Kombucha Tea Ready to Drink

Kombucha is a naturally fermented, delicious beverage filled with probiotics and antioxidants which are known for their many health benefits. Dozens of varieties are available in stores, but kombucha can easily be made at home for a fraction of the cost. In this class we will discuss the origins of kombucha, the magic of the SCOBY (symbiotic colony of bacteria and yeast), the simple equipment needed to brew kombucha, and the varieties of teas and sugars that result in the best tasting kombucha. We will sample homemade kombucha and store brands for comparison. Each participant will make kombucha in class and leave with a kombucha SCOBY and recipe to continue making their own kombucha at home.
Class will be led by Jolene Smith. Jolene was first introduced to the kombucha SCOBY by her great aunt in 1999. She immediately took an interest in making kombucha, thinking that the SCOBY was the strangest organism she had ever seen. Jolene lives in York, Pennsylvania with her family, two dogs, two cats, and a fish. Her formal education is in Art & Design and Environmental Science.
Class size is limited to ten, so register early!


Tomorrow, Saturday, September 7 from 9 to 11, we’ll be exploring the fields and woods on the lookout for the plants and animals that make their home at the Horn Farm. The Living Landscape is a fun opportunity for adults and children to explore the farm with Woodland Steward Wilson Alvarez. Each month’s class is different based on what the land presents and what questions you ask. Topics covered may include:
Animal and insect tracking
Identification of wild plants
Tree and bark identification
Macro-invertebrates
Soil analysis
Reading the landscape
Nature observation
Bird language
Topography
Understanding water flows
Primitive skills
the living landscapeCome prepared for all weather, to get dirty, wet, and sometimes hot and sticky! This class is family and child friendly, but children must be accompanied by an adult. Registration is per person, regardless of age. Our next The Living Landscape session is Saturday, September 7. See you there!

Horn Farm Happenings – August 30, 2019

This week we definitely felt a shift toward autumn. The nights are cooler, the goldenrod is blooming, and the leaves on the trees are beginning to change color. August and September are the months when we dive deep into planning mode. The board of directors will have its annual retreat next weekend. The nominating committee is interviewing potential board members for 2020. The five paid staff (Alyson, Jon, Andrew, Wilson, and Pam) are spending time and a lot of mental energy redesigning the farm and our educational offerings for next season. Soon we will present a draft budget to the finance committee for review. Plant growth may have slowed, but there’s always plenty of work to do!


On the first Saturday of the month from 9 to 11, we have a program for all ages called The Living Landscape. This is a fun opportunity to explore the farm with Woodland Steward Wilson Alvarez. Each month’s class is different based on what the land presents and what questions you ask. Topics covered may include:

applesWhile the growing season may soon come to the end, there are simple ways to preserve the harvest! Canning foods is an easy way to preserve seasonal produce, to support local agriculture, and to be sure of what is in your food. Join us On September 10 for our final canning class of the season: Introduction to Canning Applesauce. The class will be led by Mary P. Hall. Mary grew up surrounded by canning, starting in her great grandmother’s kitchen. From a young age she helped her great grandmother as she grew and canned most of the food she served to her family. Although a career in communications and raising her family took her away from canning for several years, a desire to be more in control of the food she was eating and to be able to preserve the food grown in her own garden brought Mary back to preserving food. Each year, Mary and her now-adult children host marathon canning weekends, where they can jam, pickles, relishes and other goodies that feed their families throughout the year as well as making great gifts for friends. Mary lives in Manchester, Pennsylvania with her four cats, three chickens, too many fruit trees, and an unruly garden. The class will be held in our historic summer kitchen, so space is limited.
