Sunchokes, AKA Jerusalem artichokes, are edible tubers from a type of sunflower that grows naturally across Eastern North America. For centuries, sunchokes have been cultivated, tended, and cherished by Native Americans as a reliable winter crop. Colonizers later appropriated sunchokes into European cuisine. However, sunchokes today are a rare find, enjoyed primarily by foragers and habitat gardeners with an appreciation for native foods.
Sunchokes are best cooked and can be enjoyed in soups and stews, roasted with other fall vegetables, and even fermented. As perennials with a long history in our bioregion, sunchoke leaves and flowers also feed beneficial insects, provide habitat for wildlife, and beautify gardens with late-summer floral interest.
Horn Farm Center’s organically-grown sunchokes (Helianthus tuberosus) are available in Red Fuseau and Stampede varieties. Having been tended at the Horn Farm Center for over a decade, these tubers are well adapted to our Lower Susquehanna River region, and grow resiliently across a wide range of climates and conditions. It should be noted that sunchokes spread eagerly through underground stems and tubers. Without annual harvesting or maintenance, they can easily outlast containment. For this reason, we recommend planting sunchokes in an area where you don’t mind them taking over a large, open area.
From our farm to your favorite recipe – or suitable for planting. Enjoy!
