Pawpaws

This week you’ll find North America’s largest native fruit in your shares -pawpaws! Pawpaws are native to Pennsylvania and 25 other states. They have a custard-like texture similar to a banana and their flavor is a mix of banana, and mango oftn with hints of pineapple or melon. Nutritionally pawpaws are high in vitamin C, magnesium, iron, copper, manganese and potassium. The skin and seeds are non edible and similar to pears they’re ripe when brown spots form on the skin. However, they have a limited shelf-life so they need to be consumed or frozen quickly; they can be refrigerated for up to a week and pureed then frozen they can last much longer. They’re wonderful to eat plain or added to smoothies and there are now many recipes online for use them in baked goods and custards.

There’s a pawpaw orchard at Horn Farm that is still in it’s growing stages but in the coming years should produce some wonderful fruits. This weekend is also the Pawpaw Festival at the Horn Farm, come join us to learn more about and try some pawpaws!

Summer Squash Casserole

Summer squash season is long and I’m always looking for new recipes and ways to use it.  Summer squash noodles, grilled summer squash, roasted – all are great.  A few years ago I had a delicious summer squash casserole at a friend’s wedding. It was warm cheesy comfort food and just what I needed at the end of summer and with cooler weather coming in.  Here’s my rendition of that casserole

  • 2 cups thinly sliced summer squash
  • 1 ear of corn cut off the cob
  • 1 jalapeno (my favorite CSA hot pepper)
  • 1 medium onion chopped
  • 2 cloves of garlic
  • 2 T butter
  • 1 egg
  • 1/2 C sour cream
  • 1 C shredded cheese
  • Crushed crackers for topping
  1. Preheat oven to 400F
  2. Saute the vegetables in the butter until just softened
  3. Mix the sour cream and 3/4 C cheese into the veggie mix, add the egg once it has cooled a bit so it doesn’t scramble in the heat
  4. pour the mixture into a 9×9 in casserole dish
  5. Mix the remaining cheese with the crackers and top the casserole with the mixture
  6. Bake for 25 minutes

Happy Labor Day

Here’s wishing you all a very happy Labor Day!  Cookouts and grills are wonderful ways to use the veggies in your CSA.  Here’s some ideas:

  • Marinated grilled vegetable kabobs
  • Watermelon mint salad
  • Grilled corn on the cob
  • Potato salad
  • Panzanella salad

What are your favorite holiday cookout recipes?
